Every time I upload an attachment to use it on a page it is saved/indexed in a category, I want these images/files to be hidden from view, is there a way to do this?

Hidden from view in what way?
If you want to make these images not visible at all, you should upload the images into an area that the user does not have the following permission:
- Area Permissions > Can view content saved in this Area?
Then if you embed the image somewhere, and the user does not have the permission, the image won't appear (depending on their browser, they might see the "Red X").
If you want to allow users to access content in the area (and see the images wherever you embed them), but want to hide the images from the area's content list, go to AdminCP > Wiki > Structures > Area Manager, and edit the area where the images are stored. Look for the setting:
- List Options > Start by Showing Only
Change the value from "Any Page Content" to a type that is more suitable for the content in your area. Note that users can still choose to show images when they view the list, but the default view will only show your selection.
You can also elect to not mix images and regular content in the same area (which you can enforce in your area setting "Allowed Content Types"). You can use inline moderation tools in the list view to move any images you already uploaded.
